Garlic Herb Flatbread Chips

Ingredients

  • Flatbreads: 6 large flatbreads (such as pita, naan, or lavash). These form the base of our crispy chips. Choose your favorite type, but thinner flatbreads tend to crisp up best.
  • Olive Oil: ½ cup extra virgin olive oil. This is essential for both flavor and achieving that perfect golden-brown crispiness. It also helps the herbs and garlic adhere to the flatbread.
  • Garlic: 4 cloves garlic, minced. Freshly minced garlic provides the most pungent and delicious garlic flavor.
  • Fresh Herbs: ¼ cup mixed fresh herbs, chopped (such as rosemary, thyme, oregano, parsley, chives). A blend of herbs adds complexity and freshness. Feel free to use your favorites or what you have on hand.
  • Salt: 1 teaspoon sea salt or kosher salt. Enhances all the flavors and is crucial for seasoning the chips properly.
  • Black Pepper: ½ teaspoon freshly ground black pepper. Adds a touch of spice and depth to the flavor profile.
  • Optional: Red Pepper Flakes: ¼ teaspoon red pepper flakes (for a touch of heat). If you like a little kick, these are a great addition.
  • Optional: Parmesan Cheese: ¼ cup grated Parmesan cheese (for extra cheesy flavor). For a richer, savory chip. Ensure you use vegetarian Parmesan if needed.


Instructions

  1. Preheat Your Oven and Prepare Baking Sheets: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper. This prevents sticking and makes for easy cleanup. Parchment paper is really your best friend here to ensure even baking and prevent any burnt bottoms.
  2. Prepare the Garlic Herb Oil: In a small bowl, combine the olive oil, minced garlic, chopped fresh herbs, salt, and black pepper (and red pepper flakes, if using). Stir well to ensure all the ingredients are evenly distributed throughout the oil. Allow this mixture to sit for a few minutes to allow the flavors to meld and infuse into the oil. This step is important for maximizing the flavor of your chips; the longer the herbs and garlic sit in the oil, the more flavorful the chips will be.
  3. Brush the Flatbreads with Garlic Herb Oil: Place one flatbread at a time on a clean cutting board. Using a pastry brush or a spoon, generously brush the top surface of the flatbread with the prepared garlic herb oil. Make sure to distribute the garlic and herbs evenly across the surface. Don’t be shy with the oil – it’s what makes the chips crispy and flavorful. If you are using Parmesan cheese, sprinkle it evenly over the oiled flatbread now.
  4. Cut the Flatbreads into Chip Shapes: Using a pizza cutter or a sharp knife, cut each oiled flatbread into chip-sized pieces. You can cut them into triangles, squares, or any shape you prefer. For triangles, cut each flatbread in half, then in half again, and then diagonally into triangles. For squares, simply cut the flatbread into even squares. Aim for roughly uniform sizes to ensure even baking. Smaller pieces will crisp up more quickly and be more chip-like, while larger pieces will be a bit sturdier.
  5. Arrange Chips on Baking Sheets: Arrange the cut flatbread chips in a single layer on the prepared baking sheets. Ensure they are not overcrowded, as this can lead to steaming instead of crisping. If necessary, bake in batches to avoid overcrowding. Giving them some space allows for air circulation and ensures they get beautifully crispy all over.
  6. Bake Until Golden and Crispy: Place the baking sheets in the preheated oven and bake for 8-12 minutes, or until the chips are golden brown and crispy. The baking time will depend on the thickness of your flatbread and your oven. Keep a close eye on them, especially towards the end of the baking time, as they can burn quickly. You want them to be nicely browned and firm to the touch.
  7. Cool and Crisp Up Further: Once baked, remove the baking sheets from the oven and let the garlic herb flatbread chips cool on the baking sheets for a few minutes. As they cool, they will crisp up even further. This is a crucial step for achieving that perfect chip texture, so resist the urge to move them too soon.
  8. Serve and Enjoy: Transfer the cooled garlic herb flatbread chips to a serving bowl or platter. They are best served immediately while they are still warm and crispy. Enjoy them on their own, or with your favorite dips, spreads, or as part of a charcuterie board.
