  • 1 tablespoon cornstarch
  • 1/4 cup (60ml) water

For Topping:

  • 1 cup (150g) fresh strawberries, hulled and halved

Instructions

Creating the Juicy Strawberry Drizzle Cake is a straightforward process if you follow these steps:

Step 1: Prepare the Oven and Cake Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line it with parchment paper.

Step 2: Make the Sponge Cake

  1. In a large bowl, cream together the sugar and butter until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 3: Bake the Cake

  1. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 4: Prepare the Strawberry Drizzle

  1. In a small saucepan, combine the sliced strawberries, sugar, lemon juice, and water.
  2. Bring to a simmer over medium heat, stirring occasionally.
  3. Mix the cornstarch with a small amount of water to create a slurry, then add it to the saucepan.
  4. Continue to simmer until the mixture thickens, about 5 minutes.
  5. Remove from heat and let it cool slightly.

Step 5: Assemble the Cake

  1. Once the cake is completely cool, place it on a serving platter.
  2. Pour the strawberry drizzle over the top, allowing it to cascade down the sides.
  3. Arrange the halved strawberries on top for decoration.
