Ingredients

  • Rolled Oats: The base of our energy balls, providing fiber and a chewy texture. Use certified gluten-free oats if needed.
  • Unsweetened Shredded Coconut: Adds a delightful tropical flavor and natural sweetness, also contributing healthy fats.
  • Almond Flour: Enhances the texture, provides protein and healthy fats, and adds a subtle nutty flavor.
  • Honey or Maple Syrup: A natural sweetener that binds the ingredients together. Maple syrup is a vegan alternative.
  • Coconut Oil: Helps bind the ingredients, adds a subtle coconut flavor, and provides healthy fats. Use melted coconut oil.
  • Lemon Zest: The key to the vibrant lemon flavor! Use fresh lemon zest for the best taste.
  • Lemon Juice: Adds a tangy kick that balances the sweetness and complements the coconut perfectly. Freshly squeezed is recommended.
  • Chia Seeds: Boosts the nutritional value with omega-3 fatty acids, fiber, and protein, while also helping to bind the balls.


Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, unsweetened shredded coconut, almond flour, and chia seeds. Stir to combine these dry ingredients evenly. This ensures that all the ingredients are well distributed before adding the wet components, leading to a more consistent texture and flavor in the final energy balls.
  2. Add Wet Ingredients: In the same bowl, pour in the melted coconut oil, honey (or maple syrup), lemon zest, and lemon juice. The melted coconut oil will help bind the mixture together, while the honey or maple syrup provides sweetness and further binding. The lemon zest and juice infuse the mixture with that signature zesty lemon flavor.
  3. Mix Thoroughly: Use a spatula or your hands to mix all the ingredients together until well combined. Initially, it might seem a bit dry, but continue mixing and pressing the ingredients together. The moisture from the wet ingredients will gradually distribute throughout the dry ingredients. You want to achieve a slightly sticky dough that holds together when pressed.
  4. Roll into Balls: Once the mixture is well combined and holds together when pressed, start rolling it into balls. Take about a tablespoon of the mixture at a time and roll it between your palms to form a smooth, round ball. Aim for consistent size for even servings. You can adjust the size slightly based on your preference.
  5. Coat in Coconut (Optional): For an extra touch of coconut flavor and visual appeal, you can roll the energy balls in extra unsweetened shredded coconut. Place some shredded coconut in a shallow bowl and gently roll each energy ball in it until coated. This step is optional but adds a nice texture and enhances the coconut flavor.
  6. Refrigerate to Firm: Place the rolled energy balls on a plate or baking sheet lined with parchment paper. Refrigerate them for at least 30 minutes, or ideally for an hour, to allow them to firm up. Refrigeration helps the coconut oil to solidify, which in turn makes the energy balls firm and easier to handle. This chilling time also allows the flavors to meld together beautifully.
