Quick Berries and Cream Wraps

  • Author: Amanda

Ingredients

Scale
  • 4 Large Flour Tortillas (10-inch): The soft, pliable foundation of our wrap. Flour tortillas are ideal as they roll easily without cracking, creating a perfect vessel for the creamy filling.
  • 8 ounces Block Cream Cheese (softened): Use full-fat for the richest flavor and creamiest texture. Softening it to room temperature is crucial for a smooth, lump-free spread.
  • 2 cups Mixed Fresh Berries (chopped): A vibrant medley of strawberries, blueberries, raspberries, and blackberries. The mix provides a wonderful variety of sweet and tart flavors and beautiful colors. Chop larger berries, like strawberries, into small, bite-sized pieces.
  • 3 tablespoons Powdered Sugar (or to taste): Also known as confectioners’ sugar, this dissolves instantly into the cream cheese, ensuring a smooth texture without any graininess. You can adjust the amount based on the sweetness of your berries and your personal preference.
  • 1 teaspoon Vanilla Extract: A small amount adds a warm, aromatic depth of flavor that complements both the cream cheese and the fresh berries beautifully.
  • Optional: 1/2 teaspoon Lemon Zest: A secret weapon for brightness. The zest of a lemon cuts through the richness of the cream cheese and makes the berry flavors pop.

Instructions

  1. Prepare the Berries: Begin by gently washing your mixed berries under cool running water. Pat them thoroughly dry with a paper towel. This step is critical; excess water can make the cream cheese filling runny and the tortilla soggy. If using strawberries, hull them and chop them into small, dime-sized pieces. Leave smaller berries like blueberries and raspberries whole. Set them aside in a bowl.
  2. Create the Creamy Filling: In a medium-sized mixing bowl, add the softened block of cream cheese. Using an electric hand mixer or a sturdy spatula, beat the cream cheese until it is completely smooth and free of lumps. Add the powdered sugar and vanilla extract (and lemon zest, if using). Continue to mix until everything is well-combined, light, and fluffy. The consistency should be easily spreadable, similar to frosting.
  3. Warm the Tortillas (Optional but Recommended): For maximum pliability and to prevent cracking, it’s a great idea to warm your tortillas. You can do this by heating a dry skillet over medium heat and warming each tortilla for about 15-20 seconds per side. Alternatively, stack the tortillas, wrap them in a slightly damp paper towel, and microwave for 20-30 seconds until they are soft and warm.
  4. Assemble the Wraps: Lay one warm tortilla flat on a clean work surface. Spoon about one-quarter of the cream cheese mixture onto the center of the tortilla. Using the back of the spoon or an offset spatula, spread the filling evenly over the tortilla, leaving about a 1-inch border around the edges. This “dry zone” helps prevent the filling from squeezing out when you roll it.
  5. Add the Berries: Sprinkle about half a cup of your prepared mixed berries evenly over the cream cheese layer. Try to distribute them so you get a bit of every type of berry in each bite. Avoid overfilling the wrap, as this will make it difficult to roll tightly.
  6. Roll it Up: To roll the wrap, gently fold in the left and right sides over the filling. Then, starting from the bottom edge closest to you, tightly roll the tortilla up and away from you, enclosing the filling completely to form a secure, burrito-style wrap. The folded-in sides will keep the berries and cream contained.
  7. Serve and Enjoy: You can serve the wrap whole or slice it in half on a diagonal to reveal the beautiful, colorful cross-section of berries and cream. Serve immediately for the best texture and flavor.
