- Prepare the Pudding: In a medium-sized mixing bowl, whisk together the instant vanilla pudding mix and cold milk. It’s crucial to use cold milk to ensure the pudding sets up properly and quickly. Whisk vigorously for about 1-2 minutes, or until the pudding mixture starts to thicken and becomes smooth. Make sure there are no lumps of pudding mix remaining.
- Let the Pudding Set: Allow the pudding to sit at room temperature for about 5 minutes to thicken further. This step is essential to allow the pudding to reach its desired creamy consistency. You’ll notice it becoming noticeably thicker as it sits.
- Crush the Cookies/Crackers: While the pudding is setting, prepare your cookie or cracker layer. If using vanilla wafers or graham crackers, place them in a resealable plastic bag. Seal the bag and use a rolling pin or the bottom of a heavy pan to crush them into coarse crumbs. You don’t want them to be completely powdered; some texture is desirable for the parfait.
