- Preheat oven: Set to 425°F (220°C) and position a rack in the center. Line a baking sheet with parchment paper for easy cleanup and even roasting.
- Prep carrots: Wash and, if desired, peel them. Trim ends and cut into uniform 2-inch sticks.
- Season carrots: Place sticks in a bowl, drizzle with olive oil, then sprinkle with salt and pepper. Toss gently until each piece is evenly coated.
- Roast carrots: Spread them in a single layer on the baking sheet. Roast for 20 minutes until golden and tender.
- Make glaze: In a small saucepan over low heat, melt unsalted butter, honey, and fresh thyme. Stir for about 2 minutes until smooth and fragrant.
- Glaze carrots: Brush warm honey butter mixture generously over each carrot. Return to oven for 5–7 minutes until glossy.
