For the Chicken Filling
- Heat a large nonstick skillet over medium-high heat and add a tablespoon of oil.
- Add minced garlic and grated ginger, stirring for 30 seconds until fragrant.
- Crumble in ground chicken, stirring and cooking until no pink remains, about 5 to 7 minutes.
- Pour in soy sauce and hoisin, stirring constantly for about 2 minutes until sauce thickens.
- Stir in chopped water chestnuts and sliced green onions, folding gently.
For Assembly
- Arrange butter lettuce leaves on a serving platter and wash them dry.
- Scoop chicken mixture into each lettuce cup, adding shredded carrots, peanuts, cilantro, lime, and sriracha.
