Ingredients
  

For the Chicken Filling
  • 1 pound ground chicken Choose lean for a healthy base
  • 2 cloves garlic minced
  • 1 tablespoon ginger fresh, grated
  • 2 tablespoons soy sauce low-sodium
  • 2 tablespoons hoisin sauce
  • 3 scallions green onions thinly sliced
  • 1 cup water chestnuts chopped
For the Lettuce Wraps
  • 8 leaves butter lettuce for wrapping
  • 1/2 cup fresh cilantro optional
  • 1 cup shredded carrots
For Serving & Garnish
  • 1/4 cup chopped peanuts toasted
  • 2 pieces lime cut into wedges
  • to taste Sriracha or chili sauce

Method
 

For the Chicken Filling
  1. Heat a large nonstick skillet over medium-high heat and add a tablespoon of oil.
  2. Add minced garlic and grated ginger, stirring for 30 seconds until fragrant.
  3. Crumble in ground chicken, stirring and cooking until no pink remains, about 5 to 7 minutes.
  4. Pour in soy sauce and hoisin, stirring constantly for about 2 minutes until sauce thickens.
  5. Stir in chopped water chestnuts and sliced green onions, folding gently.
For Assembly
  1. Arrange butter lettuce leaves on a serving platter and wash them dry.
  2. Scoop chicken mixture into each lettuce cup, adding shredded carrots, peanuts, cilantro, lime, and sriracha.
