Preparation
- Preheat the oven to 375°F and grease a 9×13-inch baking dish with butter or olive oil.
- In a skillet over medium heat, warm olive oil. Cook diced onion and garlic until soft and translucent, about 3–4 minutes.
- Season chicken with salt, pepper, and dried herbs. Add to skillet and brown on each side for 2–3 minutes.
- Transfer chicken to the baking dish. Stir in long-grain rice and chicken broth.
Assembly
- In a medium bowl, whisk together cream cheese, milk, and shredded cheddar cheese until smooth.
- Pour the cheesy sauce over the rice and chicken, spreading evenly. Finish with a sprinkle of Parmesan cheese.
- Loosely cover with foil and bake at 375°F for 35 minutes.
- Remove foil and bake an additional 5–7 minutes until cheese bubbles.
- Let the bake rest for 5 minutes before serving. Sprinkle with chopped parsley or chives.
