  • 2 cups cooked brown rice Use day-old rice for best texture
  • 1 cup broccoli florets
  • 1 cup julienned carrots
  • 1 cup sliced bell peppers Choose a mix of colors
  • 1 cup snow peas
  • 3 cloves garlic minced
  • 1 tablespoon ginger freshly grated
For the Sauce
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • to taste red pepper flakes optional

  • 1 cup tofu or chicken breast cooked separately
  • 2 tablespoons green onions thinly sliced
  • 1 tablespoon sesame seeds toasted

Method
 

How to Make
  1. Warm 1 tablespoon neutral oil over medium-high heat until it shimmers.
  2. Toss in 3 cloves minced garlic and 1 tablespoon grated ginger and sauté for 30 seconds until fragrant.
  3. Add 1 cup broccoli florets, 1 cup julienned carrots, 1 sliced bell pepper, and 1 cup snow peas and stir-fry for 3-4 minutes.
  4. Whisk together 3 tablespoons soy sauce, 1 teaspoon sesame oil, 1 tablespoon honey or maple syrup, 1 teaspoon rice vinegar, and red pepper flakes in a small bowl.
  5. Add 2 cups day-old brown rice and pour the sauce over the veggies. Stir well for 2 minutes.
  6. Transfer to bowls and top with sliced green onions and sesame seeds before serving.
