Ingredients
  

For the Filling
  • 4 large Eggs whisked
  • 1 cup Shredded cheese your choice
  • 1 cup Spinach or kale fresh
  • 1 cup Bell peppers diced
  • 1/2 cup Onions diced
  • 1/2 can Black beans optional
For the Tortillas
  • 4 large Whole wheat or corn tortillas
For Seasoning & Extras
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1/4 cup Fresh cilantro for garnish
  • 1/2 cup Salsa or hot sauce for dipping

Method
 

For the Filling
  1. Warm a drizzle of oil in a nonstick skillet over medium heat until shimmering.
  2. Add diced bell peppers and onions to the pan; cook for 5 minutes until softened and golden.
  3. Push veggies aside, pour in whisked eggs seasoned with cumin and chili powder; stir for 2-3 minutes until just set.
  4. Stir in fresh spinach leaves and black beans; cook for 1-2 minutes until greens wilt and beans are heated.
Assembling & Cooking
  1. On half of each tortilla, layer a sprinkle of cheese, a scoop of filling, then more cheese.
  2. Fold tortillas in half, cook in a heated skillet for 2-3 minutes per side until golden brown and cheese is melted.
