Preparation
- Preheat your oven to 400°F.
- Peel and cut parsnips into 3- to 4-inch spears.
- In a large bowl, toss parsnips with olive oil, salt, and black pepper.
- Spread parsnips in a single layer on a parchment-lined baking sheet.
- Roast for 25–30 minutes, flipping once.
Glaze
- Melt butter with maple syrup, fresh thyme, and garlic powder in a small saucepan over medium heat.
- Simmer for 2–3 minutes until the mixture thickens slightly.
- Remove parsnips from oven, brush each piece generously with warm glaze.
- Return to roast for 5 more minutes.
- Transfer glazed parsnips to a warm platter and serve immediately.
